Sautéed Nopales, Peppers, and Corn

Ingredients
1 large red bell pepper
1 cup corn (canned or frozen)
1 large green bell pepper
2 cups diced nopales
1 large onion
1 minced garlic
½ tbsp extra virgin olive oil
Minced cilantro and parsley, optional

Prepare the Dish
Halve peppers, then remove seeds and stems then dice. Cut the onion the same size. Cook vegetables and minced garlic in olive oil in a pan over medium heat until just softened. Add diced nopales and corn to mixture; stir over medium heat until vegetables are cooked through, but firm (about 5 minutes). Sprinkle with herbs and serve hot. Makes 4 servings.
