Sweet Potatoes & Carrot a L’Orange
Kitchen Tip: Uncooked sweet potatoes should not be stored in the refrigerator.
Ingredients:
2 cups thinly sliced sweet potatoes (1 large)
1 cup sliced carrots
½ cup orange juice
1 teaspoon grated orange peel
1 teaspoon lemon juice
1 teaspoon cornstarch
1 tablespoon water
2 tablespoons slivered almonds
Directions:
Boil or steam sweet potatoes and carrots until tender. When they are almost done, boil the orange juice in a saucepan. Add the orange peel and lemon juice. Dissolve the cornstarch in 1 tablespoon of water and add to the orange juice mixture. Continue to heat, stirring until thickened. Remove vegetables from saucepan and place in serving dish. Drizzle orange sauce over them and sprinkle almonds on top.
Makes 4 servings.

Tips for exercising during the winter months
• Dress in layers. Layering clothes helps maintain body heat.
• If it’s too cold, head inside for dancing or another activity.
• Even though it is cold outside, it is still important to drink plenty of fluids.
